Immune Boosting Chicken Noodle Soup

The most soothing healing yummy winter soup

Ingredients

  • 2 tbsp olive oil
  • 2-3 onions chopped small
  • 2-4 garlic cloves minced
  • 3 large carrots chopped small
  • 3 stalks of celery chopped small
  • 1 celery root cut skin off, then chop small
  • 2 dried bay leaves put in whole
  • 4 chicken thighs, cooked already chopped small
  • 1 gluten free noodles I like this brand: Cappello's
  • 4-6 cups chicken bone broth
  • 1-2 tsp pink Himalayan sea salt
  • 1 tsp freshly ground pepper

Instructions

  • Add olive oil to your soup pot
  • Chop onions and garlic and sauté
  • Add carrots, celery and celery root
  • Stir the above mixture on medium heat and sauté for about 5-10 minutes
  • Add dried bay leaf, salt and pepper
  • Add broth, cooked chicken and noodles
  • Allow to simmer for 2+ hours, enjoy! (Don't eat the bay leaf, just save for another soup or toss in the compost)
